​Just wanted to conform that GVP 8.5 is supported on windows 2016 as the hardware page says only up Win 2012 for 8.5 and Win 2016 for 9.0, but the VMware deployment guide has 8.5 down as being on win 2016.

I'd always use the SOE documentation here: https://docs.genesys.com/Documentation/System/latest/SOE/GenesysMediaServer
Which aligns with the hardware page that you placed up that Version 9 is required for Server 2016 support.
