I have 2 Media Servers that are no longer used in production.  I have disabled them from accepting sessions in the web configuration.  Should I also remove them from the IA > System Configuration > Media Servers > Servers node?

Yes. Here are the steps I would follow:

• Set accept sessions to No or Deactivate (admin section)
• Wait for active sessions to clear
• Delete from Media Servers container in Interaction Administrator
• Delete trusted certificates in Interaction Administrator
