Hello,
we have build already a hugh "serverfarm" which creates lots of effort to maitain, but we still need to stay on on-premise, the idea is born to move some components on to a cloud such as exoscale or kubernetes.
Does anybody has already some experience on that?
Which components whould be possible to move and which absolutely are not recommendet?
What are the highest risks?

I think that is going to be a difficult question to answer via a forum.  I would suggest that you get in touch with your Genesys account representative and see if they can engage Genesys business consulting to analyze your current deployment and contact center volume in order to make an educated suggestion for which components might be able to be moved to the cloud.
