Can't answer for FAX specifically but you can use interaction connect (Web)
or desktop app for calls:
https://github.com/GenesysPureConnect/MacClientand for softphone just use anything that has a MAC installer and set up a a non managed phone.
We have 5 MAC users who do take calls via Interaction Connect and Polycom hard phones on their desks.

Searching through the Community for MAC questions, did you ever get a answer on this?
Similar situation where marketing department also takes calls from time to time and uses MAC's by default but cannot get the software installed for them.
