If you are using no intents and no knowledge, then yes you can have the No Match output to do whatever you want. The other option would be to use a slot instead of the Digital menu because the Ask for Slot should not listen for for any other input but what you have in the slot. As for limiting typing, don't think that is possible.
On this one, you could probably again probably use an Ask for Slot with a REGEX using the options as the first 4 and then an anything REGEX as the 5th. Kind of unconventional, but that is what makes this so fun!

Hey all,
Couple of questions with the Digital bot flow,
First one is we would like to present a digital menu with 3 options and remove the option to enter text, meaning they will need to click one of the three options presented to them in the chat, is this possible?
The second question bit opposite to the above, we have another digital menu, with 4 options, but we would like them to either select something from the menu or enter something as free text then move onto the next question.
