Hi,
Looking at the documentation it looks like the api endpoint /api/v2/conversations/emails/{conversationId}/messages should be returning the body of the email (string required) The text body of the email message. It does not if you run it in the developer tools. Is this incorrect in the documentation or a bug?

The answer will vary based on multiple factors.
What is the provider for the email? Only PureCloud provider emails will have a body. How old is the email? Only emails that are recent will have the body.
Generally, if you expect a response from an API and aren't getting it then opening a care ticket would be the best bet as they can actually look at your API calls and determine what's happening.
