Is there any way to encrypt email sent from purecloud to defined recipients.

PureCloud doesn't offer encrypted email functionality.
You could use third party email to provide a custom solution. You can also request the functionality via the ideas portal and track it but it is not on our near term roadmap so I wouldn't expect anything within the next year or two.
