If you want to have a different UI design or remove input during quick replies, you would need to build your own UI.
There's documentation on how to do it on https://developer.genesys.cloud/commdigital/digital/webmessaging/messengersdk/ but most often the ease of getting new features without development is more important than having a branded UI with specific functionality.
You can still use it to build a custom chat button with notifications (since that's not available yet) among other things.

Did you pick "Bot Flow" in Architect?
There should also be "Digital Bot Flow" available which has an easier way to build menus, although the same can be done in Bot Flows it's a bit more complicated if you're just looking for a menu to pick intents from.

It differs depending which bot you're using, but the easiest way is to use the Digital Bot Flow.
There you can just add a Digital Menu with the options you want.

This is done by adding a bot to the Incoming Message flow.
You can set it to auto-start in the Messaging Configuration so it starts when they open the chat.
