I like to compare Genesys Cloud to NetFlix, or FaceBook, or YouTube.... Genesys release updates and everyone gets them. There is no "versioning" as such. If you don't pay attention to the release notifications, you log in one day and find that someone has rearranged the furniture - usually for the better!

Release Wednesday can be scary for any organization. Rest assured, that if any new feature is released, there is usually a permission attached to it, so if you don't assign that permission, the agents won't have access to that new feature. Also, any changes to the interface or ways of doing things are announced 60 days to 6 months in advance. There is no way to opt out of releases as this is a single, multitenant environment and every Org is on the same build and release. If you want to test new features, get a separate development Org from your production one.

Are releases are auto approved or pushed?
Does the customer have the ability to accept and schedule releases?
