There are two places. The Trunk Media can be set to Opus and the recording format under the trunk settings can also be set differently than the trunk media. I would start with the recording format since that does not affect the trunk. You can add Opus to the trunk, but the carrier has to accept that as well. I would put Opus as the first CODEC and then have G.711 and G.729 under that.

What do you mean by testing? You can download the file and try to play it. You can't really see the bandwidth of Opus in a call unless you do some packet captures.
