Are they using work only computers? As there are ways to disable fonts from carrying over on copy and paste, although these are universal to all applications. The settings on Macs, for example, are under Apple menu > System Preferences > Keyboard.
Another more "life hack" way is to copy it first into a source that's neutral on fonts and then copy it again and paste it into the desired destination. Putting it in the browser URL bar first, for example, could be a good quick way to do that and then copy it again and paste it into the email. However, that will strip out paragraph breaks and other text formatting so very likely isn't a solution unless the emails are typically very brief.

Yes our agents will use outside notes at times, or copy and past information from the site, or other resource pages. Then the email inherits that font.

Is the issue that when you paste text from an outside source that it inherits the font type?
