After reading this article here, I understand now how the addressNormalized and addressRaw among other items can be set.

What it doesn't explain is what is "User Id" in the context of a Unauthenticated Web Messaging interaction for the from Customer address. What is the "User Id" a guid to and what API is available to query that object?

Yes, your are correct. The from field is the sessionId in un-authenticated mode.
