Getting http 404 errors when trying to hit the REST APIs via Postman. Does something have to be turned on in PureCloud to enable these endpoints ?

Hello,
Is it the url path that you are trying to use (/api/v4/analytics/...) ? if so, it not the right one. The current version is v2 -> /api/v2/analytics/... You can find a description of the Analytics API endpoints & url path here.
