Is there a way to track all configuration changes made?
I found all the list of available topics here
https://developer.genesys.cloud/api/rest/v2/notifications/available_topics
But I'm not sure on which topic/s should I make subscription

Not everything is tracked. The list of things that are tracked can be found here: https://developer.genesys.cloud/api/rest/v2/audit/actioncatalog

I don't mean this in a snarky way, but anything that can be tracked is in the list. Everything else cannot be tracked. So if you're looking for a particular something and aren't finding it in the list, it's not tracked.
