Is there a way to control the caller id provided to the carrier for a callback interaction like is available in the call interaction post which has callerId and callerIdName parameters when dialing a call?

No, POST /api/v2/conversations/calls/{conversationId} only accepts the number to dial and an optional column name if it's for a dialer record. Outbound ANI will be handled per standard configuration.
