For PureCloud for Salesforce and now the Embedded Framework, is there a specific property on a new Callback which will show text in the view where the agent sees the customer phone number and the Make Call button? I assumed the large textbox which is empty and grey may have a way to put some text for the agent to know more about the context of the Callback.

Not at this time, but this is certainly something we can look in to adding the underlying client. If/When it gets added to the client, it would become simultaneously available in PureCloud for Salesforce, PureCloud for Zendesk, PureCloud for Chrome, and any app built on top of the PureCloud Embeddable Framework.
