While you could try port mirroring the Edge servers, it will be difficult to determine what is captured without mapping to conversations. If you really must try recording outside of the PureCloud policies, then your best bet is an SBC with SIPREC enabled and pointing to a SIPREC server that request audio for each inbound and outbound media path.
If you are just wondering if it can be done, switch to TLS and SIPS to secure the calls
