Do you know how I can unpublish the evaluation forms we created?

We want to retain them and do not want to delete it - unless there is no option.

There's no option to unpublish a form, however, you can copy your Evaluation form and leave it in an unpublished state whilst you work on a new revision.  You can then delete the original published form if its no longer required.
