Back and forth on this one over the years and going to be moot here pretty soon. Used to be that you had complete control with no auto-updating, but then that ran into issues with customer that never updated and the old edges not being compatible with the cloud services. So, they added an auto-update feature that you could set the time, but for some reason, that was replaced with the maintenance windows for the platform. I understand the problem with lock-ups and without some good monitoring of the edges through the API, you can't know if the updates cause an issue unless you go in and look at them on Thursday morning before the business opens.
Like I said, with Genesys not really wanting to support local edges anymore, it would be better for you to move what you can to a local SBC that you can control. Sure, you miss out on local registration, but most SBC's would allow for that and sending calls through the SBC to BYOC Cloud.
