Though I cannot speak for the rest of the community. I have seen customers upgrading their browser once a quarter.
Just be aware that if you run into an issue and open a case with Care and they see that the browser is out of date you maybe asked to update as one of the troubleshooting steps.
When it comes specifically to the GC softphone in SF its most important that you keep the managed package up to date as we have very tight versioning control and only can support up to 1 or 2 versions behind the most recent version.
