No, there is not a specific list that I am aware of.
The main thing is that the user is not actually removed from the system. It is a step beyond Inactive, bt if you try to add a new user with the same email Address it will prompt you to restore the deleted user rather than create a new one.
So, all recordings and other queue-related data is still in the system. Along with most everything else. Unless you do a GDPR request to delete info...and even then I'm not sure exactly what gets wiped vs. details obfuscated.

Genesys Cloud does not delete some information related to the deleted user, including email address, performance data, conversation history, chat history, files stored in documents, and voicemails.
Specifically, what happens to past recordings (customer / agent interactions).
