Right. You don't have control over the Edges in PCV, by design. Those edges are not the same as physical/virtual edges used on-premises. The PCV/AWS-based edges run as microservices, in a pool that gets spun up/down as needed for a particular org based on load. So, management of those edges is restricted.
So, when those edges update it's not exactly the same process as local edges which have to download the new software and install it.
I'm giving a pretty general description...I haven't dug into exactly how the updates work for the AWS edges, so I can't get in-depth.

The site the Edges are assigned to are the PCV site, and the other configured sites are just referencing the PCV site, so that means that the other configured sites update schedules are not looked at, right? But we can't configure an update time on the PCV site.

Edges update based on the schedule of the site that they are assigned to. Not sites that reference the edges in the PCV site
Last time I asked, Development assured me that only one edge updates at a time.
