Hi Naila,
Technically that field is the 'message' property of their presence. It is really just a field to give the agent some freedom to express themselves. For instance here at Genesys a lot of the employees will put maybe their favorite quote, a music group they like, if they are going to be out on holiday, or even emojis. Genesys doesn't really use that message anywhere other than to display it on their profile and in the UC chat function with other employees.
As far as I know there is no way to just restrict editing that single field of their profile, but you can remove the Directory->userProfile->Edit permission from the role(s) assigned to them so that they can't edit anything about their profile.
