We found how to exclude the email address but now also would like to exclude the name of the sendor.  Is this possible? 

Setting the From Name should overwrite the Agent name.  Do you have that set:

Thanks, Robert!  We have done this in campaigns, is this possible for faxes sent by direct users?

No, if an Agent has a DID, then the fax will use that number, otherwise, it will use the trunk OLI.
