That sounds correct.
If you wanted to keep some of them, a Retention policy should override the Delete policy, so if you retain the calls for a specific user or another queue, and their calls transfer to the queue marked for Delete, those recording should still be retained.

If I set a policy to delete automatically all the voice interactions for a specific Queue. I believe that all the inbound/outbound calls will be deleted.
But would, all the transferred calls to/from this Queue, be also deleted ?

Essentially, immediately. In the scenario you present, the packets are saved during the call, but deleted when the call ends.
