Also
is there a way to ensure PCI data for the customer details collected during agent interaction can be automatically detected and retracted by Genesys (in the event agent missed using secure pause)

Secure variables in bot flows only work when invoked from a secure flow.
You could transfer from the inbound call flow to a secure call flow then to a bot flow.
